Microwave Hot Fudge Sauce

When we first got married 15 years ago, I never thought I would need a hot fudge recipe, but it turns out, I certainly do and it’s too good not to share with you! First of all, it’s all made from a few dry ingredients and a little water in the microwave, but please don’t let that stop you from making this! The flavor is outrageously chocolaty and that thick smooth warmth on top of cool creamy ice cream…well there are just few things better!

And like most of my recipes, this one definitely has a sweet story (see what I did there ;)). We opened up our wedding gifts a couple of days after returning from our honeymoon, and this gift was different from the others. I didn’t realize it then, but looking back it was one of the most thoughtful gifts that we received. It was from an older lady that went to my church growing up, and to be completely honest, at that point in my life (sophomore year of college!), I wasn’t super excited about a set of 6 old fashioned ice cream sundae cups and a hand printed recipe for hot fudge, but it is one of the most treasured things in my kitchen now!

While unpacking and organizing our new apartment, I tucked the hot fudge recipe into my recipe box, put the glasses in the highest cabinet, and didn’t touch them the entire time we lived there!

5 years later, we moved into our first house, and I don’t remember the exact conditions, but I remember going through my recipe box searching for a dessert that looked easy and only used things I already had in my pantry. We had some ice cream in the freezer and when I came across “microwave hot fudge sauce,” I decided to give it a go.

At first I thought it was a fail because in the beginning it truly does look just like chocolate water that can’t become the deliciousness you see in these photos (let alone in 2-ish minutes in a microwave!), but never fear, it will thicken and it is a thing of beauty once it’s done. So silky, warm, and deeply chocolatey.

This is better than any hot fudge that you will buy or, dare I say, receive on a sundae at your favorite ice cream joint.

The only drawback to making this yourself is that once you see how easy it is, you will want to make it every night.

On ice cream? Yes.  On brownies? Yes. On chocolate chip cookies? Yes. Eating it with a spoon? …you get the idea.

Easy Microwave Hot Fudge Sauce

Ingredients:

  • 1/2 cup sugar
  • 3 tablespoons cocoa powder
  • 1 1/2 tablespoons cornstarch
  • dash of salt
  • 1/2 cup water
  • 1/2 tsp instant coffee (optional)
  • 1 tsp vanilla (optional)
  • 2 tablespoons butter (or vegan/dairy free butter)

Directions:

Mix 1/2 cup sugar, 3 tablespoons cocoa, 1 1/3 tablespoons cornstarch, 1/8 teaspoon salt, and 1/2 teaspoon instant coffee, if using, in a microwave safe bowl.

Pour in the 1/2 cup water and whisk until there is no longer a layer of dry cocoa powder on top. (Whisk like you mean it. It takes a second so just be patient with it.)

Place bowl in the microwave and cook for 45 seconds. Whisk. Place in microwave for another 45 seconds. Whisk again.

Place back in the microwave in 15 second intervals if it has not yet thickened, whisking after each time until your fudge thickens. Mine usually takes just one revolution. Just watch it so it doesn’t boil over or get too thick.

Once it’s thickened, whisk in the 1 teaspoon vanilla if using  and  two tablespoons of regular or vegan butter until it melts completely.

Enjoy over ice cream, brownies, cookies, cakes, on a spoon, or in a homemade ice cream cake!
